Pecorino Toscano has been made in these hills since the Etruscan age. Behind every good wheel is a process that takes patience, temperature, and instinct — things that are very hard to explain and very easy to understand once you've done it yourself. In this workshop, you'll work with fresh sheep's milk from start to finish: curdling, separating, pressing, and learning to read the signs that tell a cheesemaker whether a wheel is heading in the right direction.
You'll also taste pecorino at different stages of ageing — young and milky, semi-aged and slightly tangy, fully matured and sharp — and understand what time and environment actually do to a cheese. It's a window into a craft that most visitors to Tuscany eat but never see.
Ideal for food lovers, slow travel enthusiasts, and anyone curious about the artisan food traditions that define this region.
