There are things you learn once and cook for the rest of your life. Fresh pasta is one of them. In this 3-hour class held in a professional kitchen in Cortona — one of the most beautifully preserved medieval towns in all of Tuscany — you'll make pasta dough by hand, roll it out, cut it into tagliatelle or shape it into ravioli filled with ricotta and spinach. You'll also prepare potato gnocchi and a classic pizza dough, learning how to work with a natural leavening process that makes all the difference.

While the pizza bakes, you'll put together a simple but proper pasta sauce using ingredients from the Mediterranean tradition — nothing complicated, everything flavourful. Then comes the part everyone agrees is the best: sitting down at the table together and eating what you've made, with a glass of good Tuscan wine.

This class is ideal for couples, small groups of friends, and anyone who wants to take a real skill home from their trip rather than just a souvenir.
